Process method

Two distinct process profiles

We export two certified process variants, each with documented fermentation and drying parameters available in the lot traceability report.

PROCESS 01

Wine Natural Process

Cherries dried whole on raised beds under direct sun and shade rotation. Extended fermentation produces fruit-forward, complex cup profiles highly valued by specialty roasters.

PROCESS 02

Honey Process

Pulped with controlled mucilage retention, dried on raised beds. Balanced sweetness and clarity — versatile across filter and espresso roast profiles.
